We are currently seeking a talented and experienced Executive Chef to lead our kitchen operations.
Job duties:
Lead and mentor the kitchen team, fostering a supportive and collaborative work culture.
Develop and update menus featuring authentic Mexican cuisine, making adjustments based on seasonal ingredients, customer feedback, and culinary trends.
Plan and direct food preparation and cooking activities to ensure efficiency, consistency, and adherence to established recipes and standards.
Ensure consistent quality, flavour, and presentation of all dishes, including tacos, enchiladas, burritos, fajitas, house-made salsas, and other traditional specialties.
Estimate food requirements and labour costs, and monitor kitchen expenses to maintain profitability.
Manage inventory levels and order supplies and ingredients as needed.
Recruit, train, and supervise cooks and kitchen staff.
Maintain high standards of cleanliness, food safety, sanitation, and kitchen organization at all times.
Collaborate with ownership and front-of-house leadership to enhance menu offerings and deliver an exceptional guest experience.
Requirements:
Completion of secondary school is required.
Cook's trade certification (Red Seal or equivalent), or a combination of relevant culinary training and experience, is required.
At least 3 years of experience in commercial food preparation, including experience preparing authentic Mexican cuisine and traditional regional specialties.
Minimum two years of experience in a supervisory role such as Sous-Chef, Chef, or Executive Chef.
Experience in menu planning, recipe development, food costing, inventory management, and overall kitchen operations.
Experience recruiting, training, and supervising kitchen staff.
Strong knowledge of traditional Mexican cooking techniques, ingredients, food presentation standards, and food safety regulations, including HACCP principles.
Ability to work in a fast-paced environment and a flexible schedule, including evenings, weekends, and statutory holidays, as required.
