We are currently seeking a talented and experienced Executive Chef to lead our kitchen operations.

 

Job duties: 

  • Lead and mentor the kitchen team, fostering a supportive and collaborative work culture.

  • Develop and update menus featuring authentic Mexican cuisine, making adjustments based on seasonal ingredients, customer feedback, and culinary trends.

  • Plan and direct food preparation and cooking activities to ensure efficiency, consistency, and adherence to established recipes and standards.

  • Ensure consistent quality, flavour, and presentation of all dishes, including tacos, enchiladas, burritos, fajitas, house-made salsas, and other traditional specialties.

  • Estimate food requirements and labour costs, and monitor kitchen expenses to maintain profitability.

  • Manage inventory levels and order supplies and ingredients as needed.

  • Recruit, train, and supervise cooks and kitchen staff.

  • Maintain high standards of cleanliness, food safety, sanitation, and kitchen organization at all times.

  • Collaborate with ownership and front-of-house leadership to enhance menu offerings and deliver an exceptional guest experience.

 

Requirements:

  • Completion of secondary school is required.

  • Cook's trade certification (Red Seal or equivalent), or a combination of relevant culinary training and experience, is required.

  • At least 3 years of experience in commercial food preparation, including experience preparing authentic Mexican cuisine and traditional regional specialties.

  • Minimum two years of experience in a supervisory role such as Sous-Chef, Chef, or Executive Chef.

  • Experience in menu planning, recipe development, food costing, inventory management, and overall kitchen operations.

  • Experience recruiting, training, and supervising kitchen staff.

  • Strong knowledge of traditional Mexican cooking techniques, ingredients, food presentation standards, and food safety regulations, including HACCP principles.

  • Ability to work in a fast-paced environment and a flexible schedule, including evenings, weekends, and statutory holidays, as required.
