Detailed Job Description

• Clean, sort fish and inspect fish for defects.
• Fillet fish meeting yield standards.
• Prepare fish to size and cut specifications, skin, debone and gut fish as required.
• Clean and cook crab as required.
• Clean and package shrimp in 1 lb tubs or as required.
• Sanitize work area and equipment before filleting and survey all equipment to assure proper working order before use.
• Handle product properly to ensure maximum shelf life.
• At end of shift or during process change, clean work area and put away tools, totes, and excess product properly.
• Package fish offal at end of shift.
• Follow company procedures when handing and labelling fish.
• Finish orders in a timely manner and inform supervisor of any changes or problems.
• Weigh and tag product throughout shift.
• Assist with value added product; smoking, candying and drying fish.
• Enter information into a database as required.
• Process the sale of fish and shellfish, including portioning, preparing, weighing, packing, labelling and processing payments relevant to the business
• Prepare seafood displays and assist customers with seafood purchases.
• Assist selling fish and shellfish by interpreting and satisfying customer needs, through upselling/link selling and promotions.
• Record temperatures and other information when receiving fish and shellfish
• Complete cleaning logs and smoke logs as required.
• Where all required PPE and food handling gear (hair nets, aprons, gloves, etc)
• Clean food handling gear at end of shift.
• Perform customer intake and assist customer when picking up their custom order.
• Other duties assigned by supervisor.
