Job Description

Donnellan’s Irish Pub is currently seeking to hire an experienced Executive Chef to join its team for steady, full-time employment. 

 

In the role of Executive Chef, the buck stops with you.  You will be responsible for leading, motivating and managing a busy kitchen in the heart of Vancouver’s entertainment district.  You will be working alongside management to ensure that Donnellan’s customer experience is expressed and upheld through authentic menu offerings and a high level of customer service.  We are looking for someone with more than just an ability to cook, but also the ability to help lead the innovation of our menu and the IRL brand.

 

Main Duties and Responsibilities:

  • Responsible for planning and directing all culinary activities, including food preparation and cooking activities for a busy Irish restaurant;
  • Leading recipe and menu development, food cost analysis, menu planning and pricing;
  • Maintaining accurate inventory and records of food, supplies and equipment;
  • Ensuring the highest standards of sanitation, cleanliness and safety are consistently maintained and exceeded in alignment with the restaurant’s normal food safety standards and provincial protocols;
  • Leading and managing food and labour cost initiatives, including minimizing waste and theft, as well as providing data to management for related budget areas (food and labour costs);
  • Hiring and training all members of the kitchen staff;
  • Supervising activities of sous-chefs, line cooks, kitchen helpers and other kitchen staff;
  • Performing quality-control audits;
  • Establishing and maintaining kitchen cleaning schedules;
  • Arranging for equipment repair and new equipment purchases;

 

Requirements:

Work Experience: At least 5 years of directly related work experience as a chef with at least two years of experience as a head chef or executive chef

Education: No Minimum Education Requirements

Skills:

  • Demonstrated knowledge of culinary techniques and practices
  • Understanding of menu and recipe development techniques
  • Understanding of inventory controls and menu costing
  • Understanding of health and sanitation laws
  • Must be able to prepare authentic Irish cuisine in a busy commercial setting, train and supervise kitchen staff, and work as part of a team.

Certificates: Must possess a valid Food Safe Level 1 Certificate

Language of Work: English

 

Job Details:

Terms of Employment: Full-Time, Permanent

Hours Per Week: 40 hours per week

Salary: $70,000/annum

Benefits: Extended Health Benefits available after 90 days; Share of Gratuities
